Apple Berry Fruit Crisp

This perfect and easy dessert with a few simple ingredients for a delicious, healthy dessert!

Ingredients

Filling
  • cup water
  • 3 apples, diced in ½ inch cubes
  • 1 Tablespoon flour
  • 1 teaspoon cinnamon
  • 4 Tablespoons apple juice, divided
  • ½ cup dried cranberries
Topping
  • 1 Tablespoon olive oil
  • 1 cup rolled oats
  • 4 Tablespoons apple juice
  • cup shredded unsweetened coconut
  • ½ teaspoon cinnamon
  • 1 Tablespoon butter at room temperature

Instructions

Filling
  1. Dice the apples into ½-inch cubes (do not peel the apples). Combine the water, diced apples, flour, cinnamon and 2 Tablespoons of the apple juice in a medium pot.
  2. Simmer on medium-low heat approximately 5 minutes, stirring occasionally.
  3. Add the remaining 2 Tablespoons of apple juice and the cranberries and cook for another 5 minutes. Add more juice as needed to prevent drying /sticking until the apples are soft. Remove from heat.
Topping, make while filling is cooking
  1. Combine 1 Tablespoon olive oil and the oats in a skillet and stir to combine.
  2. Cook over medium heat, stirring constantly until oats are toasted.
  3. Add the apple juice and while stirring, cook for another minute.
  4. Lower heat to medium-low and add the coconut and the cinnamon. Continue to cook for about 5 minutes until light brown. Turn off the heat and add the butter. Set this aside until the filling is ready.
  5. Spoon filling into 4 bowls, and cover each with topping mixture. Serve warm or at room temperature.

  • Other spices, such as “apple pie spice” nutmeg cloves etc
