Caesar salad

Creamy, mild garlic dressing cloaks crisp greens in this delicious salad.

Ingredients

Caesar Salad
  • Dressing:
  • 1 small clove garlic
  • ¼ teaspoon kosher salt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • 1 ½ tablespoons olive oil
  • Black pepper to taste
  • Salad:
  • 2 large heads romaine lettuce
  • 1 ½ cups croutons
  • ¼ cup grated Parmesan cheese

Directions

  1. Dressing:
  2. Mash the garlic clove with the salt in a small bowl.
  3. Whisk in the lemon juice, mayonnaise, mustard and Worcestershire sauce until well blended.
  4. Gradually whisk in the olive oil until a creamy dressing forms,
  5. Taste and add pepper and more salt if necessary.
  6. Salad:
  7. Wash and spin the romaine.
  8. Tear into bite-sized pieces and place in a large salad bowl.
  9. Toss with the dressing, croutons and cheese.
  10. Finish with additional black pepper, if desired.

Notes

Substitution and variations

  • Add 1 cup of cooked chicken to the salad.
  • Add ½ cup chicken and ½ cup cooked whole grain pasta, such as penne or rotini
  • Try using kale instead or romaine
