Creamy Coconut Rice Pudding

A simple, luscious dessert that kids love

Ingredients

  • 2 cans full fat coconut milk, well shaken
  • ½ cup medium grain rice, such as CalRose Hinode
  • ½ teaspoon kosher salt
  • 2 teaspoons vanilla extract
  • 1 tablespoon sugar
  • 1 ½ teaspoons ground cinnamon
  • 1 banana, peeled and mashed
  • Seasonal soft fresh fruit for topping, chopped

Directions

  1. Put coconut milk in a large saucepan and heat over medium high until bubbles just start to form,
  2. Stir in rice, salt, vanilla, sugar and cinnamon.
  3. Reduce heat so that the mixture is gently simmering.
  4. Stir frequently so that rice doesn’t stick; in between partially cover the pan with a lid.
  5. After 15 minutes, check the rice for doneness, then fold in the banana.
  6. Continuing cooking and stirring until rice is tender and pudding has thickened, about 20 minutes total.
  7. Top each serving with one to two tablespoons of fresh seasonal fruit.
