Rainbow Fried Rice

An easy, healthy, delicious, and the perfect recipe to cook with kids.

Ingredients

  • 2 cups cooked and cooled brown rice
  • ¼ cup onion, finely minced
  • 1 Tablespoon garlic, finely minced
  • ½ cup carrots, diced
  • 1 teaspoon sesame oil
  • 1 Tablespoon soy sauce
  • 2 Tablespoons green onions, thinly sliced
  • 1 Tablespoon vegetable oil
  • ½ cup peas
  • 2 eggs
  • ½ teaspoon salt

Directions

  1. Cook the rice, if necessary.
  2. Prep the vegetables: Mince the onion and garlic and dice the carrots into cubes around the size of peas. Thinly slice the green onions.
  3. In a small bowl, combine sesame oil, soy sauce and sliced green onions. Set aside.
  4. Heat the vegetable oil in a large pan (preferably non-stick), then add the onion, garlic, carrots and peas to the pan and saute for 2-3 minutes, stirring occasionally.
  5. Whisk the eggs with the salt together.
  6. Move the vegetables to the sides of the pan to make space in the middle. If necessary, add more vegetable oil to the center space. Add the eggs and scramble until cooked.
  7. Add the rice to the pan and gently mix to combine all the ingredients. Continue cooking for 1-2 minutes.
  8. Sprinkle the fried rice with the sesame oil/soy sauce/green onion mixture and stir to combine.

Notes

Variations to Try

  • Add diced ham, cooked chicken or shrimp.  
  • Add more veggies, such as broccoli or cabbage
  • Fried rice is a delicious way to use up your leftover rice with just about any vegetables or meat/seafood
