Spiced Poached Pears

A simple yet delicious way to eat pears when they are in season.

Ingredients

  • 4 Barlett or Anjou pears
  • 3 cups apple juice
  • ½ teaspoon cinnamon
  • ½ teaspoon ground ginger
  • Zest of 1 orange
  • Zest of 1 lemon

Directions

  1. Peel, halve and core the pears.
  2. In a medium saucepan, mix the juice with the remaining ingredients.
  3. Bring to a boil then slip the pear halves in.
  4. Reduce heat to simmer, put a lid on the pan.
  5. Cook the pears until they are easily pierced with a fork, about 15-20 minutes.
  6. Serve each pear half with a drizzle of the poaching liquid.
