Vegetable Chili with Rice

This fragrant and comforting vegetarian chili recipe is packed with a hearty blend of vegetables and beans.

Ingredients

  • 1 ¾ cups water
  • 1 cup long white rice
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 carrot, chopped
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • teaspoon ground black pepper
  • 2 (15 oz.) cans beans (black, kidney or pinto)
  • 1 can (15 oz.) diced tomatoes
  • 1-2 Tablespoons cooking oil
  • 2 Tablespoons green onions or cilantro

Instructions

Cook the Rice
  1. Put the water in a medium sized pan and bring to a boil.
  2. Stir in the rice, reduce the heat to low, cover and simmer for 15 minutes or until water is absorbed.
Make the Chili
  1. Mince the garlic and chop the onion, bell pepper and carrots.
  2. Measure out the spices (chili powder, cumin, salt and pepper) into a small bowl.
  3. Open and drain the cans of beans. Open the can of tomatoes.
  4. Add the oil to the pot. Stir in the onion and garlic and cook on medium heat until fragrant.
  5. Stir in the spices and salt.
  6. Add the carrots and bell pepper to the pot and cook for 2 minutes.
  7. Add the beans and tomatoes to the pot.
  8. Stir together and simmer for 15 minutes. If you prefer your chili on the thicker side, continue simmering a bit longer.
  9. While the chili is cooking, chop the green onions and/or cilantro.
  10. Serve with rice and topped with chopped cilantro or onion.

Notes

Variations to Try

  • Try topping the chili with grated cheese, a dollop of greek yogurt or sour cream.
  • If you like your food spicy, add a few dashes of hot sauce, a few chili flakes and/or diced jalapeno pepper
  • If you have more time, use brown rice instead - or serve on top of whole wheat spaghetti.
