Caesar salad
Creamy, mild garlic dressing cloaks crisp greens in this delicious salad.
Ingredients
Caesar Salad
- Dressing:
- 1 small clove garlic
- ¼ teaspoon kosher salt
- 2 tablespoons fresh lemon juice
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- ½ teaspoon Worcestershire sauce
- 1 ½ tablespoons olive oil
- Black pepper to taste
- Salad:
- 2 large heads romaine lettuce
- 1 ½ cups croutons
- ¼ cup grated Parmesan cheese
Directions
- Dressing:
- Mash the garlic clove with the salt in a small bowl.
- Whisk in the lemon juice, mayonnaise, mustard and Worcestershire sauce until well blended.
- Gradually whisk in the olive oil until a creamy dressing forms,
- Taste and add pepper and more salt if necessary.
- Salad:
- Wash and spin the romaine.
- Tear into bite-sized pieces and place in a large salad bowl.
- Toss with the dressing, croutons and cheese.
- Finish with additional black pepper, if desired.
Notes
Substitution and variations
- Add 1 cup of cooked chicken to the salad.
- Add ½ cup chicken and ½ cup cooked whole grain pasta, such as penne or rotini
- Try using kale instead or romaine
