Avocado Caprese Tomato Toast

This toast is a taste of summer on a plate and is always a popular recipe in our classes.

Ingredients

  • 2 ripe avocados
  • 2 teaspoons fresh lemon juice
  • Kosher salt and black pepper
  • 4 slices whole grain bread, toasted
  • 4 oz. fresh mozzarella cheese, sliced and cut into pieces to fit the toast
  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh basil leaves, roughly chopped
  • Balsamic glaze for drizzling

Directions

  1. Peel and pit avocados and put in a bowl.
  2. Add the lemon juice and season with the salt and pepper.
  3. Mash with a fork, leaving the texture somewhat chunky.
  4. Spread the avocado mixture on each piece of toast.
  5. Layer on the mozzarella, tomatoes and basil.
  6. Season with more salt and pepper if desired and finish with a drizzle of balsamic glaze.
  7. Serve immediately.

Notes

Substitution and variations

  • Try whole, sliced tomatoes 
  • Rub the toast with a garlic clove before layering on the other ingredients
