Pancake Planets

Adding masa to these pancakes provides a hearty texture and flavor. Our classes love them.

Ingredients

  • ¾ cups all-purpose flour
  • ¼ cup masa
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • 1 cup buttermilk
  • About 2 tablespoons neutral oil + more for pan
  • Fresh blueberries, optional

Directions

  1. In one mixing bowl, combine flours, masa, baking soda, baking powder, and salt.
  2. Mix well with a large spoon.
  3. In another bowl, whisk eggs, buttermilk and 2 tablespoons oil until well blended.
  4. Stir wet ingredients into dry ingredients, mixing with spoon just until mixed.
  5. Pour batter into a large measuring cup.
  6. Coat frying pan with oil, then heat on medium-high.
  7. Pour about ¼ cup batter into frying pan for each pancake. Cook until bubbles form on the surface then flip.
  8. Cook until the underside is golden. Continue this method with remaining batter.
  9. Top with blueberries if desired.

Notes

Substitution and variations

  • Try strawberries or banana as a pancake topping
  • Use yogurt as a substitute for buttermilk
