Double Chocolate White Bean Brownies

This simple dessert is packed with protein and chocolatey goodness. Toss everything in, bake, that's it!

Ingredients

  • cup cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt (if nut butter is unsalted)
  • 1 15-ounce can white beans (northern or cannellini), rinsed
  • 1 egg
  • 3 Tablespoons smooth sunflower butter (substitute almond butter or other desired nut butter)
  • 5 Tablespoons honey
  • 1 teaspoon vanilla
  • ½ cup dark chocolate chips (divided in half)

Instructions

  1. Preheat oven to 350℉.
  2. Line a 8” x 8” pan with parchment paper (highly recommended) OR grease pan with butter or vegetable oil.
  3. Sift the dry ingredients (cocoa powder, baking powder, baking soda, sea salt) together into a medium bowl.
  4. Combine all ingredients (sifted dry ingredients, white beans, egg, sunflower butter, honey, vanilla and HALF of the dark chocolate chips) in a food processor or powerful blender. Process until smooth, scraping down the sides as it blends together.
  5. Pour batter evenly into the 8” x 8” parchment-lined, or greased pan.
  6. Add the remaining HALF dark chocolate chips by spreading across the top, and gently press into the surface of the batter.
  7. Bake for 30 minutes, or until a toothpick comes out clean
  8. Allow to cool for about 10 minutes before cutting into 2” x 2” squares for 12 small servings OR 2½ ” x 2½” squares for 9 servings.

Notes

Variations to Try

  • Try with black beans.
  • Coconut shreds and nuts can be used for the second half of dark chocolate chips.
  • Maple syrup can be used instead of honey.
