Sweet Potato Latkes

So healthy, yet so delicious. Kids enjoy the twist of sweet potato in this classic Jewish dish with its crisp exterior and pillowy middle.

Ingredients

  • 1 medium sweet potato, peeled
  • 1 small yellow potato, peeled
  • ½ large apple
  • 1 small, or ½ large, yellow onion
  • 1 egg
  • cup all purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon (optional)
  • Oil to pan fry ( approximately ½ cup)
  • Greek yogurt and/or applesauce to top

Instructions

  1. Peel the sweet potatoes and the yellow potatoes.
  2. Grate the sweet potato, yellow potato, onion and apple into a large bowl. Wrap the mixture in a cheesecloth or thin dish rag, and squeeze out as much liquid as you can. You can also grab handfuls of the mixture and squeeze the water out between your fingers.
  3. Place the mixture back into the bowl.
  4. Add the egg, flour, salt and cinnamon (if using), and mix until well combined.
  5. Heat a large skillet on medium heat with 2 Tablespoons of oil. Test a little bit of the mixture in the pan before cooking all the latkes - The oil needs to be quite hot and should shimmer.
  6. Scoop ¼ – ⅓ cup of the mixture into the pan and flatten gently with the back of a spatula. Let one side cook for about 2 minutes, then flip for an additional minute. Cook until browned on both sides.
  7. Place the cooked latkes on a cooling rack as you prep the rest of the latkes.
  8. Add an additional 1-2 tbsp of oil into the skillet as needed, and repeat the process until the batter is done.
  9. Serve topped with yogurt and/or applesauce

Notes

Variations to Try

  • Use sweet onion, green onions or chives instead of yellow onion. 
  • Drizzle some honey over latkes.
  • Substitute cracker crumbs or panko for flour.
  • Pour off the liquid and retain the potato starch in the bottom of the draining bowl. Mix starch back into latkes. It helps bind the mixture
