Simple Artichoke Dip/Spread

This kid favorite will have everyone asking for your recipe. Serve it with crackers or fresh baked bread!

Ingredients

Dip
  • 1 13.5-ounce can of artichoke hearts, drained
  • ¾ cup canned great northern beans
  • ½ cup cashews
  • 1 Tablespoon sweet mild small peppers, chopped
  • ¼ small onion
  • 1 small garlic clove, peeled
  • ½ teaspoon dijon mustard
  • 2 Tablespoons lemon juice
  • 2 teaspoons apple cider vinegar
  • teaspoon salt
  • ¼ teaspoon ground pepper
Vegetable Sticks
  • Carrots, washed and cut into strips
  • Celery, washed and cut into strips
  • Bell peppers, washed and cut into strips

Instructions

  1. Put all ingredients for the dip in a blender/food processor and process until it’s smooth.
  2. Serve with cut vegetables

Notes

Variations to Try

  • You can use cannellini or white beans
  • You can dip rice crackers, pita bread or pita chips
  • Great on toasts
