Mango, Jicama, Cuke Salad with Chile Lime Dressing
A refreshing, colorful salad for summertime.
Ingredients
- Ingredients
- Salad:
- 1 cup fresh mango, peeled, pitted and cut in ½” cubes
- 1 ½ cups cucumber, cut in ½” cubes
- 2 cups jicama, peeled and cut in ½” cubes
- 2 tablespoons cilantro, chopped
- Dressing:
- 6 tablespoons fresh lime juice from about 4 limes
- 1 teaspoon chile powder
- ½ teaspoon kosher salt
- ½ teaspoon honey
Directions
- Salad:
- Prep the veggies: peel, pit and cube the mango, cut the cucumber into ½ “ cubes, peel and cut the jicama into ½” cubes, chop the cilantro.
- Mix everything in a medium sized bowl.
- Dressing:
- Juice the limes.
- Mix all the dressing ingredients together in a small bowl until well combined.
- Pour dressing over and stir until all ingredients are coated.
- Serve immediately or chill in fridge if there is time.
