Vietnamese Pizza

This is a fun and nutritious way to use rice paper.

Ingredients

  • 3 eggs
  • ½ tsp fish sauce
  • ¼ tsp garlic powder
  • 6 leaves of spinach
  • ½ cup cheese
  • 3 green onions
  • 3 rice paper sheets
  • For cooking
  • Sesame oil
  • Chile oil or Sriracha
  • Salt

Directions

  2. Break the eggs into a bowl and scramble with whisk.
  3. Add garlic & fish sauce to egg mixture.
  4. Tear up spinach and add to egg mixture bowl.
  5. Place cheese in a separate bowl.
  6. Cut green onions and place in the bowl with the cheese.
  7. Take rice paper, egg mixture and cheese mixture to the cooking station.
  8. Heat pan or griddle to medium high heat. Pour 2-3 tablespoons of sesame oil in the pan/griddle,
  9. Place one rice paper on the griddle.
  10. Pour one third of the egg mixture on the rice paper and spread it to the edges.
  11. Add cheese and green onion, chili oil/sriracha if using. Add a pinch of salt.
  12. Fold over rice paper, so it creates a half circle. Turn heat to high and crisp up one side then flip to crisp the other side while making sure the egg is cooked inside. Cut in 3 pieces. Repeat with the remaining ingredients.
  13. Eat immediately!

Notes

Substitution and variations


  • Use other raw veggies of your choice, such as slices of bell pepper or cauliflower florets. You can also add other proteins like ground chicken.
