Crepes with Ham and Cheese and Quick Fruit Salad
Crepes are simple but gourmet, the ham and cheese add a comforting element.
Ingredients
- Crepes
- 4 eggs
- 1 cup milk
- ¾ cup water and more as needed
- 2 cups all purpose flour
- Oil or butter
- Filling
- 1-6 oz package of sliced, uncured ham
- 6 oz. cheese, such as cheddar or swiss
- Fruit Salad
- 1 cup blueberries
- 1 cup strawberries, sliced
- 1 banana, peeled and sliced
- 1 cup seedless grapes, halved

- Prepare the batter and the filling:
- Whisk the eggs, milk and water then stir in the flour. If the batter seems too thick, add enough water to achieve the consistency of heavy cream. Combine gently, trying not to create air bubbles in the batter.
- Grate the cheese and set aside.
- Lay out the slices of ham so they are ready to grab once you start cooking.
- Make and assemble the crepes:
- Heat the stovetop to medium-high. Lightly coat a pan with oil or butter
- Add up to ¼ cup of the batter to the pan and swirl to cover the entire bottom of the pan.
- Cook for 30 seconds, then flip the crepe over..
- Lay a slice of ham in the middle of the crepe then sprinkle over 2- 3 tablespoons of cheese.
- Fold each side of the crepe over the filling, like a business letter, and continue cooking until the cheese is melted. Turn over one more time once folded if cheese hasn’t melted to your liking then remove to a plate.
- Continue with the remaining batter, ham and cheese until all is used up.
- Make the fruit salad:
- Slice the strawberries and banana and halve the grapes.
- Put all the fruit in a medium bowl and stir well.
- Serve portions of the salad with the crepes.
Notes
Variations to Try
- Serve with Basic Salad or Easy Tomato Side Salad instead of Quick Fruit Salad
- If berries aren’t in season, substitute equal volume of orange segments, apple cubes, melon chunks or other fruits that are in season
- Add a scoop of Pico de Gallo
- Top the crepe with a fried egg
