Whole Grain Pita Pizza, With a Citrus Vinaigrette Side Salad
Pizza, salad - one of our favorite combinations and a meal you will really love too.
Ingredients
Pizza
- 4 whole grain pitas or English muffins
- ½ cup tomato sauce
- 1 ½ cups mozzarella cheese, shredded
- ½ cup mini bell pepper, chopped
- 2 mushrooms, sliced
- fresh basil leaves
Side Salad
- 4 cups spinach leaves or other baby greens
- red onion, thinly sliced
Vinaigrette
- 1 orange, juiced
- 1 teaspoon mustard
- 2 Tablespoons oil
- salt & pepper
Instructions
Pizza
- Heat the oven to 350º.
- Shred the cheese.
- Slice the peppers and mushrooms.
- Spread 1-2 Tablespoons of tomato sauce on top of each pita or muffin, using the back of a spoon.
- Sprinkle the cheese over the sauce. Place the basil and vegetables evenly on top.
- Place the pitas on a baking sheet and put them on a middle rack of the oven.
- Bake for 12-15 minutes, or until the cheese is melted.
Salad & Vinaigrette
- Cut and juice the orange.
- Add the orange juice to the rest of the vinaigrette ingredients in a small bowl. Whisk to combine. Set aside.
- Slice the onions in thin slivers
- Assemble the salad: Combine the spinach or greens, some of the onion slices and any leftover orange pieces or extra pizza vegetables on a plate. Drizzle with dressing.
