Whole Grain Pizza Primavera
Kid favorite pizza is a celebration of colorful spring and summer vegetables.
Ingredients
Tomato Pizza Sauce
- 1 6-ounce can tomato paste
- 2 Tablespoons water
- 1 Tablespoon olive oil
- ½ teaspoon salt
- 1 ½ teaspoons red onion, minced
Pizza
- 4 whole grain pitas
- ½ cup tomato pizza sauce
- 1 ½ cups mozzarella cheese, shredded
- ½ cup cherry tomatoes, halved
- ½ cup mini bell pepper, sliced
- ¼ cup red onion, sliced
- ½ cup marinated artichokes, chopped(optional)
- fresh basil leaves
Instructions
Tomato Pizza Sauce
- Combine the tomato paste, water, olive oil, salt and onion in a small bowl.
- Mix well. Set aside
Pizza
- Heat the oven to 350º.
- Shred the cheese.
- Cut the tomatoes and slice the bell pepper and onion.
- Chop the artichokes (if using or can leave whole if preferred).
- Spread 1-2 Tablespoons of tomato pizza sauce on top of each pita, using the back of a spoon.
- Sprinkle the cheese over the sauce. Place the basil and vegetables evenly on top.
- Place the pitas on a baking sheet and put them on a middle rack of the oven.
- Bake for 12-15 minutes, or until the cheese is melted.
