Yemeni Foul (Chili)
This hearty chili made with fava beans is usually eaten for breakfast in the Middle East but also makes a satisfying main dish for lunch or dinner.
Ingredients
- 1 14 oz can of fava beans (foul medamas)
- ¼ of a medium sized onion, diced
- ½ tomato chopped
- 2 cloves of garlic
- ¼ bell pepper, diced
- 1 tablespoon of tomato paste
- ¼ teaspoon of salt
- 1 teaspoon cumin
- ½ teaspoon of paprika
- ¼ cup of water
- 6 pieces of whole grain pita bread
- *Optional
- Lime wedges

Directions
- Preparation
- Pour half of the fava beans with their liquid in a bowl and mash with a fork or masher. Add the remaining whole beans to the bowl and stir to combine. Set aside
- Gather all vegetables: dice onion, bell pepper and tomato. Mince garlic. Place vegetables in separate sections on a plate.
- Gather all the seasonings and place in a bowl.
- Measure tomato paste and place in a small bowl.
- Warm pita bread on the griddle or in the oven.
- Foul
- Heat skillet to medium and add oil.
- Add onions and garlic and a pinch of salt and pepper and saute until fragrant. ( about 2-3 min)
- Add tomato paste and spices. Cook for 1 min stirring constantly..
- Add water and tomatoes then cover with lid and let cook for another minute.
- Add fava beans and mix thoroughly. Cover with lid and let simmer until the beans are heated through and spices incorporated- about 3-4 min.
- Serve with warm pita bread, lime and jalapeno, if using, and eat immediately.

Notes
Substitution and variations
- There are different variations of fava beans at the Middle Eastern Market- Look for the California Garden brand.
- You can also substitute garbanzo beans or chickpeas
- Instead of serving with pita bread, try serving with rice; any protein can be added to this dish.
- Yemeni Foul is similar to chili because of the tomato and spices used. This dish is eaten as breakfast in Arab and Middle Eastern cuisine but can also be enjoyed as a easy, healthy lunch or dinner.
