Broccoli and Grape Salad
Broccoli and grapes are a great match in this salad that has crunchy and sweet elements.
Ingredients
- Salad:
- 3 ½ cups broccoli florets, small
- ½ cup red onion, small dice
- 1 cup red seedless grapes, halved
- ¼ cup pumpkin or sunflower seeds, toasted
- Dressing
- 3 tablespoons mayonnaise
- ¼ cup plain Greek yogurt, full fat
- 1-½ tablespoons cider vinegar or lemon juice
- 1-½ tablespoon honey
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper, ground
Directions
- Salad:
- Blanch the broccoli: Bring a pot of water to a boil and add broccoli. Cook until bright green and tender but still crispy. Drain and plunge into a bowl of ice water to stop cooking. Drain again and set in a colander to drain well. Make sure it’s drained well and dry before adding dressing.
- Prepare red onions and grapes: cut the onions in small dice and halve the grapes.
- Toast the seeds: heat a small frying pan over medium high heat and add your chosen seeds to the pan. Swirl the pan to move the seeds around so they toast evenly. Once you see the seeds color slightly and smell they are fragrant, remove from the pan and set aside.
- Dressing:
- In a medium bowl, whisk all the dressing ingredients together until the mixture is smooth and well blended.
- Just before serving, place all salad ingredients in a bowl and toss with the dressing until everything is coated evenly.
