Zucchini Fritters with Herbed Yogurt Sauce
A delicious way to eat your veggies!
Ingredients
- Fritters:
- 3 medium zucchini, shredded
- ½ teaspoon kosher salt
- 3 scallions, finely sliced
- 1 clove garlic, minced
- 2 tablespoons fresh dill or mint or a combination of both, chopped
- 2 eggs
- ½ cup whole wheat flour
- ½ teaspoon baking powder
- ¼ teaspoon kosher salt, cumin and smoked paprika
- 2 tablespoons avocado or olive oil
- Sauce:
- ¼ cup dill or mint or a combination of both, chopped
- 1 cup Greek yogurt
- ½ teaspoon fresh lemon juice
- 1 tablespoon olive oil
- ¼ teaspoon kosher salt
Directions
- Fritters:
- Shred zucchini on the holes of a box grater.
- Combine with the salt and let sit while you prepare the other ingredients.
- Finely slice the scallion and mince the garlic clove.
- Put the shredded zucchini in the center of a clean dish towel and squeeze out as much liquid as possible into the sink.
- Place the shredded zucchini, scallions, garlic and eggs in a medium bowl and mix well.
- Add the flour, baking powder, salt, cumin, smoked paprika and fresh herbs and stir to combine.
- Heat the oil in a medium nonstick skillet over medium high heat until shimmering,
- Use a ¼ cup measure to drop zucchini mixture into the skillet.
- Flatten each fritter slightly with a spatula.
- Cook a few minutes on each side until golden brown.
- Serve warm with yogurt sauce.

- Chop the herbs.
- Combine them with all the other sauce ingredients.
- Taste and adjust seasoning if needed.

Substitution and variations
- Add 2 tablespoons grated Parmesan to fritter mixture
