Zucchini Fritters with Herbed Yogurt Sauce

A delicious way to eat your veggies!

Ingredients

  • Fritters:
  • 3 medium zucchini, shredded
  • ½ teaspoon kosher salt
  • 3 scallions, finely sliced
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill or mint or a combination of both, chopped
  • 2 eggs
  • ½ cup whole wheat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt, cumin and smoked paprika
  • 2 tablespoons avocado or olive oil
  • Sauce:
  • ¼ cup dill or mint or a combination of both, chopped
  • 1 cup Greek yogurt
  • ½ teaspoon fresh lemon juice
  • 1 tablespoon olive oil
  • ¼ teaspoon kosher salt

Directions

  1. Fritters:
  2. Shred zucchini on the holes of a box grater.
  3. Combine with the salt and let sit while you prepare the other ingredients.
  4. Finely slice the scallion and mince the garlic clove.
  5. Put the shredded zucchini in the center of a clean dish towel and squeeze out as much liquid as possible into the sink.
  6. Place the shredded zucchini, scallions, garlic and eggs in a medium bowl and mix well.
  7. Add the flour, baking powder, salt, cumin, smoked paprika and fresh herbs and stir to combine.
  8. Heat the oil in a medium nonstick skillet over medium high heat until shimmering,
  9. Use a ¼ cup measure to drop zucchini mixture into the skillet.
  10. Flatten each fritter slightly with a spatula.
  11. Cook a few minutes on each side until golden brown.
  12. Serve warm with yogurt sauce.
  13. Herbed Yogurt Sauce
  14. Chop the herbs.
  15. Combine them with all the other sauce ingredients.
  16. Taste and adjust seasoning if needed.

Notes

Substitution and variations

  • Add 2 tablespoons grated Parmesan to fritter mixture
  • Add lemon zest to yogurt sauce for zip
