Peachy Chicken

Peachy Chicken
An easy summer dinner to make when stone fruit is in season.
Ingredients
- 2 teaspoons paprika
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 3 tablespoons olive or avocado oil, divided
- 1 lb chicken thighs or breasts, boneless/skinless
- ¼ cup water, white wine or chicken broth
- 2 yellow peaches, firm
- 8 sprigs fresh thyme
- 2 lemons
- 1 tablespoon honey
Directions
- In a bowl, mix together paprika, salt and black pepper and 1 tablespoon olive oil.
- Cut chicken into thick slices and stir into the oil spice mixture until chicken is evenly coated. Set aside and let it marinate while you prepare remaining ingredients
- Wash peaches well and cut each into 6 wedges.
- Heat a pan over medium high heat and add 1 tablespoon of olive oil. When the pan is hot, add chicken in a single layer and sear the chicken pieces, about 2 minutes per side, getting a nice golden brown color. Remove the chicken from the pan.
- Deglaze the pan with the water, white wine or chicken broth, scraping up any browned bits then add this to the chicken.
- In the same pan drizzle 1 tbsp of oil and add the peach wedges. Cook until golden brown on one side then flip over and repeat on other side, about 1 minute per side. Add thyme sprigs and stir until fragrant.
- Add the chicken and juices back to the pan and lower the heat. Squeeze in the juice from both lemons. Cover and cook until chicken is cooked through, 2 - 5 minutes. Drizzle in honey. Toss and serve.
