Coconut Honey Granola

This is a basic granola recipe that you can add any variety of dried fruit or nuts or seeds for increased crunch and sweetness.

Ingredients

  • 3 cups rolled oats
  • ½ cup sunflower or pumpkin seeds, or a combination of both
  • Pinch of kosher salt
  • ¼ cup coconut oil - melted (microwave works well)
  • ¼ cup honey
  • 1 teaspoon vanilla
  • 1 cup golden or regular raisins, dried cranberries or cherries or a combination of these.
  • ½ cup shredded, unsweetened coconut

Directions

  1. Preheat oven to 375.
  2. Mix oats, seeds and salt in a large mixing bowl.
  3. Measure the coconut oil, honey and vanilla into a small bowl or measuring cup and whisk to combine.
  4. Pour liquid over dry ingredients and stir well, making sure the mixture is evenly coated with the honey and oil.
  5. Line a baking sheet with parchment or foil and spread the granola in an even layer.
  6. Bake for 10 minutes then take out and stir.
  7. Return to the oven for about another 5-7 minutes until granola is golden brown - watch carefully as it can go from underdone to burned in a blink!
  8. Stir in the dried fruit and coconut and allow to cool.

Notes

Substitution and variations

  • Try adding ½ teaspoon of cinnamon or ginger to the dry ingredients
  • You can use agave or maple syrup in place of honey
  • Almonds or walnuts are a nice addition
