Coconut Honey Granola
This is a basic granola recipe that you can add any variety of dried fruit or nuts or seeds for increased crunch and sweetness.
Ingredients
- 3 cups rolled oats
- ½ cup sunflower or pumpkin seeds, or a combination of both
- Pinch of kosher salt
- ¼ cup coconut oil - melted (microwave works well)
- ¼ cup honey
- 1 teaspoon vanilla
- 1 cup golden or regular raisins, dried cranberries or cherries or a combination of these.
- ½ cup shredded, unsweetened coconut
Directions
- Preheat oven to 375.
- Mix oats, seeds and salt in a large mixing bowl.
- Measure the coconut oil, honey and vanilla into a small bowl or measuring cup and whisk to combine.
- Pour liquid over dry ingredients and stir well, making sure the mixture is evenly coated with the honey and oil.
- Line a baking sheet with parchment or foil and spread the granola in an even layer.
- Bake for 10 minutes then take out and stir.
- Return to the oven for about another 5-7 minutes until granola is golden brown - watch carefully as it can go from underdone to burned in a blink!
- Stir in the dried fruit and coconut and allow to cool.
Notes
Substitution and variations
- Try adding ½ teaspoon of cinnamon or ginger to the dry ingredients
- You can use agave or maple syrup in place of honey
- Almonds or walnuts are a nice addition
