Mediterranean Grilled Cheese Sandwiches

Grilled cheese sandwich with surprising fillings that our students love.

Ingredients

  • 6 slices whole wheat bread
  • 4 tablespoons unsalted butter, room temperature
  • 8 ounces mozzarella cheese, grated or sliced
  • 1 cup spinach leaves
  • ½ cup Kalamata olives, optional

Directions

  1. Spread the butter on one side of each slice of bread ( this will be the outside).
  2. Add 2-3 tablespoons of sliced or grated cheese. Top the cheese with olives if you are using them, and some spinach leaves. Add more cheese on top of the spinach and close the sandwich with another slice of bread.
  3. Cook the grilled cheese on each side in a medium skillet on medium heat, until lightly browned and the cheese is melted, about 2 minutes. Repeat with the remaining sandwich ingredients.

Notes

Variations to try:

  1. Try with different types of cheeses in the filling
  2. Add tomatoes in the filling
