Pizza Bowls

This fun recipe is a soupy pizza in a bowl. Serve with breadstick dippers.

Ingredients

  • ½ small onion, sliced
  • 2 cloves garlic, minced or pressed
  • 1 tablespoon olive oil
  • ½ pound ground chicken
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian spice blend
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Veggie filling
  • 1 large yellow bell pepper, cored and chopped
  • 1 large zucchini, ends trimmed and sliced
  • ½ small onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian spice
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Tomato Pizza Sauce:
  • 1 6-ounce can tomato paste
  • ¼ cup water + more as needed
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried oregano
  • Bowl Toppings
  • 2 cups shredded low-fat mozzarella cheese
  • 1 cup sliced mushrooms
  • ¼ cup sliced black olives
  • 1 cup homemade pizza sauce

Directions

  2. For Chicken Filling:
  3. Prep the veggies - peel and slice the onion, peel and mince the garlic.
  4. Heat a medium frying pan over medium heat and add the oil.
  5. Add the onion and cook, stirring until softened.
  6. Add garlic and stir until fragrant.
  7. Add the ground chicken to the pan and saute together with the onion and garlic until mixed.
  8. Add the spices and seasonings, stirring to combine.
  9. Cook until the chicken is no longer pink and the veggies are golden brown
  10. For Veggie Filling:
  11. Prep the veggies - peel and slice the onion, core and chop the pepper and trim and slice the zucchini.
  12. Heat a medium frying pan over medium heat and add the oil.
  13. Add the veggies and cook, stirring often until softened.
  14. Stir in the spices and seasonings and cook until veggies are golden brown and mixture is fragrant.
  15. Tomato Pizza Sauce
  16. Combine the tomato paste, water, olive oil, salt and spices in a small bowl.
  17. Taste and add more liquid or seasonings if needed, you want sauce to be more soupy for the bowls.
  18. Mix well. Set aside
  19. Toppings and Assembly
  20. Preheat oven to 400F.
  21. Shred the mozzarella.
  22. Fill working bowls with all toppings - grated mozzarella, mushrooms, black olives and pizza sauce.
  23. Fill two more working bowls with each filling.
  24. Line up all the working bowls “buffet-style” on a table.
  25. To an oven-proof or foil bowl add:
  26. Meat or/and veggie cooked filling
  27. Top with ¼ cup pizza sauce and ¼ cup cheese
  28. Add mushrooms
  29. Finish with olive slices
  30. Place filled pizza bowls on a baking sheet and place in a 400 degrees preheat oven.
  31. Cook pizza bowls until cheese is melted and golden around edges, about 15 minutes.
  32. Remove pizza bowls from the oven and let cool for a minute before serving.

Notes

Substitution and variations

  • Try ground turkey in place of chicken.
  • Put crushed red pepper on the finished pizza bowl for added heat.
  • Use whole grain bread dough to make breadsticks that can bake alongside the bowls then be used as dippers.
  • Provide whole grain breadsticks, pita or other bread products that would be good dippers.
